Pancetta is made from pork belly and is dry cured using a combination of salt and curing salts, garlic, wine, and a variety of spices and seasonings. It has a chewy and dense texture with a peppery aroma. It crisps up just like bacon when sautéed in a hot pan. Cook it up with poached eggs and spinach toast, create a tasty lentil soup with some thrown it, or use as a superb substitute for bacon and other salty pork.
