Mashed Potatoes: Place 4 medium potatoes In microwave-safe dish with lid or with plastic wrap cover (Note: if using plastic wrap, poke one small hole in the wrap to vent). Do not puncture potato skin. Microwave on high for 9 minutes or until potatoes are tender when pierced with a fork. Mash potatoes with potato masher or electric hand mixer. Stir in milk and butter until desired consistency is reached; microwave for one more minute; salt and pepper to taste. Au Gratin Potatoes: Cut 4 medium potatoes into 1/8 inch thick slices. Pour enough milk into a microwave-safe dish to just cover the bottom. Lay part of the potato slices on the bottom of the dish in a single layer; season with salt and pepper and sprinkle with shredded Swiss, gruyere or cheddar cheese. Place in large saucepan and cover with water; bring to a boil over high heat, uncovered. Cook until tender, approximately 12-15 minutes; drain; return to pan. Heat potatoes over medium-low heat one minute to evaporate moisture, stirring occasionally. Mash potatoes with a potato masher or electric hand mixer. Stir in warm milk and butter until desired consistency is reached; salt and Pepper to taste. Pan Fried Potatoes Cut 4 medium potatoes into thin round slices; pat dry. Melt 2 tablespoons butter or margarine or heat 1/4 cup vegetable oil in a skillet. Add potatoes, cover and cook until tender and lightly browned; flipping potatoes over 2.3 times, cheddar cheese, if desired. Sprinkle with shredded Swiss, gruyere or cheddar cheese, if desired.
