Let sit for 1 hour. Overnight soak method: for every 1 lb of beans, soak in 6 to 8 cups of water in large pot. Let stand overnight in refrigerator. 2. Cook beans: add 6 to 8 cups of water to 1 lb soaked beans. * cover and bring to a boil. Reduce heat and simmer until tender, 1 to 2 hours. *if adding salt, add once the beans are almost tender to avoid toughening the skins and slowing the cook time. Add acidic ingredients such as tomatoes, vinegar, wine or citrus juice only at end of cooking, once beans are tender. Use beans in soups, chilis, salads, dips, burgers and more! Beans can be cooked in large quantities and refrigerated or frozen for later use.
