For very firm pasta, cook for 6 minutes. For firm pasta, cook for 7 minutes. For tender pasta, cook for 8 minutes. Drain well. Serve as desired. To keep cooked pasta fresh for later use, toss with a small amount of olive oil or sauce and refrigerate.

southwest chicken fideo - 2 cups hot water, 2 chicken bouillon cubes (or 2 tsp granules), 4 tbsp vegetable oil, 1 lb boneless, skinless chicken breasts, 1 cup chopped onion, 1 clove garlic, minced, 1 (10 oz) bag coil fideo, 1 tbsp chili powder, 1 can (14.5 oz) diced tomatoes with green chilies, salt and pepper, 1 cup sour cream, 1 cup shredded cheddar, dissolve chicken bouillon in hot water, set aside. Heat 1 tablespoon oil in large skillet over medium heat; Add chicken and brown well on both sides. Remove chicken to a plate to cool slightly then cut into 3/4-inch chunks. Add 1 tablespoon oil to skillet and saute onion until soft. Add garlic and saute 1 minute longer; Remove onion and garlic to a small dish. Add remaining oil to skillet; Crush coil fideo into skillet and cook, stirring, until golden brown; Stir in chili powder. Reduce heat to medium-low, add bouillon water, chicken, onions and tomatoes (including liquid); Cover and simmer about 10 to 12 minutes or until fideo is tender and liquid is absorbed. Season fideo with salt and pepper to taste. Serve topped with sour cream and cheddar cheese. Makes 6 servings.
