for charcoal grills: 1. Soak 2 cups of full circle market mesquite wood chips in water for 30 minutes while heating charcoal. 2. Remove cooking grate. Position and light charcoal as normal. 3. When charcoal is red-hot and ashed over, place the soaked wood chips directly over the coals into an even layer. Replace the cooking grate. 4. When the chips start to smoke, begin cooking immediately to capture the maximum amount of flavor. Keep lid closed as much as possible to enhance flavor and reduce flare-ups. 5. If you prefer, a smoker tin can also be used instead of placing the chips directly over the coals.

- Don't Replace: For items you'd rather not replace, choose "Don't replace" to get a refund if the item is out of stock.
