Veggie Fajitas with Warm Tortillas

- 1.0 medium red bell pepper
- 1.0 medium green bell pepper
- 1.0 medium yellow bell pepper
- 1.0 whole onion
- 1.0 15 oz can black beans
- 1.0 tsp chili powder
- 1.0 tsp cumin
- 1.0 tsp paprika
- 1.0 tsp garlic powder
- 1.0 tbsp olive oil
- 1.0 whole lime
- 1.0 tbsp fresh cilantro
- 8.0 whole flour tortillas

Preparation

Heat 1 tbsp of olive oil in a large skillet over medium heat.

Add the sliced red, green, and yellow bell peppers, along with the onion. Cook for about 5 minutes, until slightly softened.

Add the black beans, chili powder, cumin, paprika, and garlic powder to the skillet. Cook for an additional 2 minutes, stirring to combine.

Squeeze the juice of one lime over the veggie mixture and give it a good stir.

Sprinkle the chopped fresh cilantro on top of the mixture before serving.

Warm the flour tortillas in a separate skillet or in the microwave until pliable.

Divide the veggie mixture evenly among the warmed tortillas. Fold them up like a burrito.
