Spaghetti Squash Marinara

- 1 spaghetti squash
- 1 and 1/2 cups marinara sauce
- 2 tablespoons olive oil
- 5 ounces shredded mozzarella cheese
- Salt to taste
- Pepper to taste

Preparation

Preheat the oven to 400°F.

Cut the squash in half lengthwise and scoop out all the seeds.

Place halves with cut-sides down on a baking sheet lined with parchment paper.

Roast for about 30–40 minutes, until tender with a fork and lightly browned on the outside.

Use an oven mitt with one hand to hold the squash in place. With your other hand, use a fork to shred the squash, keeping the shredded squash inside its skin.

Mix together marinara sauce, olive oil, salt and pepper in a bowl.

Divide the mixture onto the two squash halves and mix it in with the shredded squash.

Top the squash halves with mozzarella, then put them back in the oven for another 15 minutes.
