Chickpea Salad Sandwich
Full ingredient list
- 1 can chickpeas, drained and rinsed
- 3 tablespoons unsweetened Greek yogurt
- 1 celery stalk, finely chopped
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt to taste
- Pepper to taste
- Whole grain bread
- Lettuce for serving
- Tomato slices for serving
- Pickles for serving

Preparation

In a medium bowl, use a fork or potato masher to mash the chickpeas until they are mostly broken down.

Add the yogurt, chopped celery, lemon juice, garlic powder, salt, and pepper to the mashed chickpeas. Mix until combined.

Spread the chickpea salad mixture onto a slice of whole grain bread.

Top with lettuce, tomato slices, or pickles if you’d like.

Place another slice of bread on top to complete the sandwich and cut in half.
