Spiced Quinoa Breakfast Porridge
Full ingredient list
- 1/2 cup quinoa, rinsed
- 1 & 1/2 cup milk of your choice
- 1 teaspoon cinnamon
- Pinch of salt
- 1 tablespoon honey or maple syrup
- 1 egg white
- 2 tablespoons raisins or 1/4 cup berries
- Banana slices topping (Optional)
- Sliced strawberries topping (Optional)
- Unsweetened coconut flakes topping (Optional)
- Nuts topping (Optional)

Preparation

Add quinoa to a medium saucepan and place over medium-high heat for 3–4 minutes, stirring occasionally.

Stir in 1/2 cup of water, milk, cinnamon, and salt.

Bring to a boil then reduce heat to simmer while you keep stirring occasionally.

Cook for 20–23 minutes, until the porridge is thick and the grains are tender.

Remove from heat and stir in the honey or maple syrup.

Add the egg white to a bowl and whisk.

Add in one spoonful of the hot quinoa and whisk. The egg white will begin to cook from the heat of the quinoa.

Continue adding quinoa, one spoonful at a time, until the egg white is entirely worked in.

Return the quinoa porridge to the saucepan and cook over medium-low heat for another minute or two, until the porridge has thickened.

Stir in the raisins or berries, and optionally, top with 1/2 banana, sliced strawberries, unsweetened coconut flakes, or nuts of your choice.
