Brussels Sprouts Breakfast Hash
Full ingredient list
- 1/2 pound brussels sprouts
- 1 tablespoon olive oil
- 1 sweet potato
- 1/2 teaspoon cumin or paprika
- 3–4 eggs
- Salt
- Pepper

Preparation

Peel the sweet potato, then shred it or cut it up.

Rinse the Brussels sprouts under water and pat dry. Remove any damaged outer leaves. Slice each sprout in half.

Heat the oil in a large skillet over medium high heat. Add the Brussels sprouts and sweet potato.

Add the seasonings and cook for about 8–10 minutes.

While the veggies are cooking, use a separate pan to fry the eggs.

Plate the veggie hash, then place the eggs on top. Add salt and pepper to taste.
