Refried Beans with Fresh Herbs & Lime

- 2 cups kidney beans, dried
- 1 cup garlic cloves, thinly sliced
- 3 cups diced onion
- 1 jalapeño, chopped
- 1/4 cup olive oil
- 1/4 cup chopped cilantro
- 1/4 cup chopped scallions
- 2 tablespoons chopped mint
- 1 tablespoon chopped thyme
- 2 tablespoons lime juice
- Salt to taste

Preparation

Follow the cooking instructions on your beans, reserving 1 cup of the cooking liquid.

Heat the olive oil over medium heat, and then add the garlic.

Once the garlic is golden brown, add the onion and jalapeño. Season with salt, and continue to cook until the onions are brown. Then, transfer to a food processor or blender.

Add the herbs, lime juice, and a 1/4 cup of the bean cooking liquid to the blender. Blend until combined, adding liquid as needed.

Using a fork, slightly crush half of the beans.

Combine everything into a medium saucepan and heat on medium-low heat, stirring occasionally to prevent it from sticking to the bottom.

Once heated through, top with scallions and serve warm. Add herbs on top for more freshness.
