Rigatoni with Caramelized Onions
Full ingredient list
- 7 sweet onions, cut in half and sliced into half moons, 1/4 inch thick
- 3–4 tablespoons olive oil
- 2 cloves of smashed garlic
- 1 tablespoon of butter
- 1 box rigatoni (or other pasta of your choice)

Preparation

Place a large pan on the stove and put it on high heat.

Add the olive oil and all of the onions to the pot. The onions should make a screeching sound as they cook. Stir well.

Once the onions start to brown, lower the heat to medium.

Stir the onions every few minutes. If they’re sticking to the pot, you can add some water.

Once the onions are brown in color, remove them from the stove, let them cool, and then finely chop them up.

Meanwhile, cook pasta according to package directions. Drain and set aside.

Add them to a new pan with 2 cloves of smashed garlic and 2 tablespoons of olive oil. Then, add the butter and mix.

Fold in the sauce from the pan with the pasta.
